Coastal Cuisine: Mahamri

You have heard a lot about Mahamri, fried dough, and a famous coastal snack, triangular in shape and which is fried to attain a golden brown hue. Mahamri makes a delicious breakfast when served with mbaazi (pigeon pea) in coconut sauce.  Today, Yummy Yummy’s recipe can serve four people.

INGREDIENTS 
250 grams wheat flour
1/2 cup sugar
1/2 cup coconut milk (tui)
1tbsp ground cardamom
1tbsp yeast
Cooking oil
PREPARATION
STEP 1

In a large bowl place wheat flour, add sugar, add ground cardamon and yeast. Mix well. Add coconut milk gradually and start kneading until you achieve a soft firm dough but not sticky. Let the dough rest for 10 minutes.

STEP 2

Cut the dough into pieces (four). Knead them into round balls. Place the balls on a rolling board and roll them one at a time. Cut the rolled ball into four triangular doughs. Leave the triangular doughs for 30 minutes.

STEP 3

Heat cooking oil under medium heat. Deep fry the triangular doughs (flip them often) until they attain a golden brown hue.

Serve with beans or pigeon peas and a cup of chai (tea) ☕. Preferably black tea 😅. And enjoy🤗😋.
